The estate
Former representative of the Pommery Champagne House, Pascal Jolivet founded his estate in Sancerre in 1987. Since his first vintage in 1991, he has continuously expanded his vineyard, which today covers 95 hectares, from Pouilly-Fumé to Touraine, including Sancerre and Pouilly-sur-Loire.
The vineyard
The Sauvage cuvée is a Sancerre wine produced from old vines planted in the communes of Champtin and Crézancy, benefiting from clay-limestone soils.
Winemaking and aging
The grapes, harvested by hand, are pressed as whole bunches. After a light cold settling, vinification takes place entirely naturally in temperature-controlled stainless steel tanks. This white Sancerre wine is aged on fine lees for nine months, bringing complexity and depth to the wine.
